I cannot even begin to explain my love of chocolate chip cookies. I’ve got a crazy sweet tooth and love most desserts but there has always been a special place in my heart for a chewy, melty, chocolate chip cookie. I’ve been on the hunt for a good recipe for years.
My default has always been the Nestle Toll-house recipe because its simple, easy, tried and true. Then I ran across this blog post while browsing Pinterest one day. I’ve never given much thought as to what the different components such as baking soda, baking powder, eggs, etc mean in a baking recipe. I just follow the instructions and use the measurements listed because I’ve always heard that not following a baking recipe exactly results in disaster.
I took Baker Bettie’s recipe for chewy choc chip cookies and made a few adjustments. The results were the most delicious cookies that I’ve ever made. This recipe is going in the family cookbook folks. I’m envisioning my grandkids (far, far into the future) begging me to “Please make another batch, grandma!” Haha.
Chewy, Melty Chocolate Chip Cookies
(adapted from Baker Bettie)
2 ¼ cups AP flour
1 tsp baking soda
1 tsp kosher salt
2 sticks unsalted butter, melted
1 cup dark brown sugar
½ cup light brown sugar
2 tbsp milk
1 tsp vanilla
1 tsp cinnamon
1 ½ cups chocolate chips
In a medium sized mixing bowl add flour, baking soda, salt and cinnamon. Stir with a fork until combined. Set aside.
Melt the butter on low heat in the microwave. Combine brown sugar and melted butter in the bowl of a stand mixer and beat until mixed. Add egg, milk and vanilla to bowl and continue to mix. With the mixer on low speed, gradually add the flour mixture into the butter mixture until blended. Stir in chocolate chips completely.
Let dough rest for at least one hour.
Preheat oven to 325 degrees.
Line cookie sheets with parchment paper. Using a cookie scoop or 1tbsp measuring spoon, scoop dough onto pan. I usually go with 9 per cookie sheet. Bake in preheated oven for 8-12 minutes, depending on desired done-ness.
Remove from oven and place on wire rack to cool.
